THAI CUCUMBER SALAD

Do you love cucumbers? Man, I really do. They are just so refreshing. I absolutely LOVE cucumber slices in my ice water. Because I love them so much, I am always coming up with different ways to enjoy them. I already have several cucumber salad posts, but they all vary in flavors. This recipe for Thai Cucumber Salad is another unique approach to enjoy the mighty cucumber.

I use and enjoy cucumbers so much that I am truly considering a little cucumber garden this spring/summer. Truth be known, it would probably be more economical to just buy the cucumbers at the grocery store, but there is just something so special and flavorful about garden fresh produce. It always tastes better.

HELPFUL HINTS FOR THAI CUCUMBER SALAD

Slice the cucmbers and red onion very, very thin.

Feel free to replace the dried mint with fresh mint.

  • Sesame oil
  • Rice wine vinegar
  • Fish sauce
  • Thai sweet chili sauce
  • Fresh lime juice
  • Dark agave nectar
  • Fresh garlic
  • Dried mint
  • Toasted sesame seeds
  • Dried red chili flakes
  • Kosher salt

A mandolin like this one make short work of slicing AND keeps the slices consistent in size.

If you are unable to find fish sauce in your local grocery store, you can find it here on Amazon. It keeps a very long time when stored in the refrigerator.

Ingredients

  • FOR THE DRESSING
  • 2 Tablespoons EVOO
  • 2 teaspoons Sesame oil
  • 2 Tablespoons Rice vinegar
  • 1 Tablespoo Fish sauce
  • 1 Tablespoon Thai sweet chili sauce
  • 3 Tablespoons Fresh lime juice
  • 1 Tablespoon Dark agave nectar
  • 1 clove Fresh garlic grated
  • 1 teaspoon Dried mint crushed/crumbled
  • 1 Tablespoon Toasted sesame seeds
  • 1 teaspoon Dried red chili flakes or to taste
  • 1 teaspoon Kosher salt or to taste
  • FOR THE SALAD
  • 2 English cucumbers thinly sliced
  • 1/4 to 1/2 Medium red onion thinly sliced
  • 3 Green onions finely sliced
  • 1/4 cup Fresh cilantro chopped, can use 1 tsp dried, if you don't have fresh
  • 1/4 cup Cashews or peanuts chopped

Instructions

  • Combine all ingredients for the dressing, give it a good whisk and set aside.
  • Using a mandolin, thinly slice the cucumbers and the red onion. Be very careful – mandolins are handy for cutting consistent slices, but very dangerous!
  • Combine all salad ingredients. Pour the dressing over the salad and toss and toss and keep tossing until everything is evenly distributed and the cucumber slices are all separated.
  • Enjoy!
