STRAWBERRY POPPY SEED DRESSING

You really must try this Strawberry Poppy Seed Dressing with my Summery Strawberry Salad.

Can you say yummy? Omgosh, this dressing is delish! It offers sweetness from the strawberries and honey and a little zip from the Dijon mustard and balsamic vinegar.

This strawberry poppy seed dressing was created to go with my strawberry salad, but can be used however you enjoy it. 

Many people find the thought of making homemade salad dressings super daunting.  It isn’t!  I promise! We’ll start making some together soon!

Making delicious homemade salad dressing is super simple and takes very little time or effort.  AND, you know exactly what is going into it, unlike store bought bottled dressings. And, the more you experiment with making dressings the more comfortable and experimental you will become.

Most homemade dressings last for weeks in the refrigerator.  This one does NOT!!! 

Trust me, I learned this the hard way…four days later, it was no bueno.  To make matters worse, I had just topped a salad with it…one of my beautiful strawberry salads.  Boo. It had to go into the garbage disposal. Just as fresh fruit breaks down rather quickly, so do the strawberries in this dressing.

HELPFUL HINTS FOR MY STRAWBERRY POPPY SEED DRESSING

If you don’t think you’ll use the full recipe within a day or two, simply cut the recipe in half, or even quarter it. 

I usually just make this for a single salad for myself, so I just make a single serving (about 1/4) of the dressing.  I use about five quartered strawberries, depending on size and just kind of guesstimate the rest of the ingredients and it always turns out yummy.

Store the dressing in a container that does not have a metal lid.  My four day old dressing mentioned above had a distinct metallic taste to it and was stored in a glass jar with a metal lid.

Equipment

  • Ninja Professional Plus Kitchen System Amazon

Ingredients

  • 1.5 cups strawberries Cleaned, stemmed and sliced
  • 1/4 cup EVOO
  • 1/4 cup Balsamic vinegar
  • 1.5 teaspoon Dijon mustard
  • 1.5 Tablespoon honey
  • 1 teaspoon poppy seeds
  • 1/2 teaspoon Kosher salt
  • 15 spins freshly ground pepper

Instructions

  • Place all ingredients in the small cup of the Ninja or a blender and process until smooth, about 30 seconds.
  • Yes, it really is that easy!!! Seriously!
