This recipe for simple slow cooker breakfast casserole is very quick and easy to throw together and it “magically” cooks throughout the night allowing you to wake up to a super easy ready made breakfast. That makes this a PERFECT candidate for Christmas morning breakfast!
I’ve also enjoyed this dish for brunch and dinner. It covers all the bases.
Seriously, besides cooking the onions and bell pepper for about 3 minutes, the rest of the preparation for this recipe is just a matter of adding some seasonings and tossing everything into a slow cooker.
HELPFUL HINTS FOR SIMPLE SLOW COOKER BREAKFAST CASSEROLE
My protein preference for this recipe is ham. You could, also, opt for bacon, breakfast sausage, chorizo, steak, or any combination of meat. If you choose to use anything other than ham, be sure to pre-cook it. AND, It would also still be delicious if you opted to leave meat out altogether.
You can use shredded or cubed frozen hash browns. I use cubed.
Cheddar cheese is great in this recipe, but use whatever you like best.
If you’d like, you can top this casserole with tons of different things, like; avocado, salsa, hot sauce, cilantro, cheese sauce, extra green onions, chili, bacon, etc.. Just let your imagination run wild!
Make sure the slow cooker is set on low.

- Yellow onion
- Red bell pepper
- Frozen hashbrowns
- Cheese
- Eggs
- Milk
- Heavy whipping cream
- Granulated onion powder
- Granulated garlic powder
- Dried dill weed
- Dried parsley
- Kosher salt
- Freshly ground black pepper
- Green onions, also called scallions or spring onions

- A slow cooker is used to cook this recipe overnight. Using one that is programable is a nice feature, but you can also use an alarm. I couldn’t find a link for the slow cooker like mine on Amazon, but I did find one online at Nordstrom’s. I am not affiliated with Nordstrom’s, but here is a link to the one I found. You may be able to find it somewhere else for less, just make sure to look for the All-Clad slow cooker with the browning feature. It’s around 350.00, which is a lot, but, to me, it is worth every cent.

FRESH SALSA would be yummy with this recipe
GRILLED FLANK STEAK – If you happen to have some left over flank steak, it would go great on top this egg dish, after the cooking process, especially with some salsa.

Ingredients
- 1 pound ham diced
- 1/2 cup real butter 1 stick
- 1 medium yellow onion finely diced
- 1 small red bell pepper diced
- 2 pounds frozen hash browns I use cubed
- 3 cups cheese shredded
- 12 eggs
- 1 cup milk
- 1 1/4 cups heavy whipping cream
- 1 teaspoon granulated garlic powder
- 1 teaspoon granulated onion powder
- 1/2 teaspoon dried dill weed
- 1.5 teaspoons Kosher salt
- 1/2 teaspoon dried parsley
- 35 grinds freshly ground black pepper
- 6 green onions (scallions, spring onions) diced, do not pre-cook with the yellow onions. Save some green onions for garnish, if desired.
Instructions
- Dice ham into smallish squares. Set aside.
- Finely dice the yellow onion. Set aside.
- Finely dice the red bell pepper. Set aside.
- If not already shredded, shred the cheese. Set aside.
- In a large bowl, crack the eggs and add the milk, heavy whipping cream and all the seasonings. Beat well.
- In a small pan, on medium-high heat, add the stick of butter.
- As soon as the butter is melted, add the onion and the red bell pepper. Cook until tender, about 3-5 minutes. Remove from heat.
- In the slow cooker, add the cooked onion and bell pepper, diced ham, egg mixture, cheese and uncooked green onion. Stir very well.
- Set slow cooker to cook on LOW. Set the timer on the slow cooker for 7 hours. After it has cooked for an hour or two, give it a stir, then just let the slow cooker do its thing.
- Tada! You have an easy breakfast to look forward to in the morning!
