SHRIMP SCAMPI WITH PASTA

Did someone say shrimp scampi?? Oh, yeah, someone did! This recipe for Shrimp Scampi with pasta is going to go on your list of recipes to repeat…often. Not only is it delicious, but it is so simple.

This recipe would be perfect to make for a VALENTINE’S DAY dinner!!!

Besides the shrimp, this recipe uses simple ingredients that many of you likely have on hand already. The really great part is that it takes very little time to prepare and cook. There is also very little cleanup required. The hardest part of this recipe is shelling and deveining the shrimp, which isn’t hard, just time consuming.

Just an FYI: This would make a great Valentine’s day meal…just saying!

HELPFUL HINTS FOR SHRIMP SCAMPI WITH PASTA

If the sauce needs any thinning to accomodate the pasta, simple add more EVOO and/or butter.

Buying a block of Parmesan cheese and shredding, or shaving it yourself is so worth the effort. It tastes amazing.

THE BEST ROASTED GARLIC will pair amazingly well with this recipe. Slather a crusty bread with butter and spread the roasted garlic liberally onto bread.

You’ll need a large pot to boil the pasta.

You will also need a large skillet/pan to cook the shrimp scampi portion. This the one I got to try. I think I love it!

I use a baking tray to pre-cook the asparagus.

Equipment

  • Large Pot
  • Large pan/skillet
  • Baking tray

Ingredients

  • 16 ounces Pasta spaghetti, angel hair pasta, or fettucicni
  • FOR THE ASPARAGUS
  • Asparagus
  • EVOO
  • FOR THE SCAMPI
  • 1 cup EVOO
  • 1 stick Real butter
  • 1 small Shallot finely diced
  • 4 cloves Fresh garlic grated
  • 2 teaspoons Cavender's Greek seasoning
  • 1 teaspoon Kosher salt
  • 20 grinds Freshly ground black pepper
  • 2 pounds Shrimp peeled and deveined
  • 3 Tablespoons Fresh lemon juice
  • 4 Green onions chopped
  • Parmesan cheese freshly shredded

Instructions

  • FOR THE ASPARAGUS
  • Pre-heat oven to 375℉
  • Line a baking tray with aluminum foil
  • Clean and trim ends of asparagus. Cut in half or into thirds. Lay in a single layer on baking sheet. Sprinkle with EVOO and bake for about 10 to 15 minutes, or until desired level of tendernes. When finished cooking, remove from the oven and set aside.
  • FOR THE PASTA
  • Cook pasta per package instructions
  • FOR THE SCAMPI
  • While pasta is cooking, heat a large pan on medium-high heat. Add the butter and EVOO.
  • Once the butter is melted add the diced shallot. Cook shallot until tender, about 3 minutes.
  • Add the cooked asparagus and the garlic. Cook for 2 minutes.
  • Add the Cavender's, Kosher salt, freshly ground black pepper. Cook for 2 minutes.
  • Add the shrimp. As soon as the shrimp turns pink it is done. It will cook quickly, about 3 to 4 minutes. Do not overcook or it will be chewy. Add the fresh lemon juice.
  • Use tongs to remove the pasta from the pasta water and place the pasta into the scampi. Use tongs and a spatula to toss the pasta into scampi sauce.
  • If after adding the pasta it doesn't seem moist enough for you, simply drizzle with EVOO and/or butter.
  • It's done! Top with green onions and freshly grated parmesan cheese, if desired.
  • Buon appetito!
