CREAMY LINGUINI AND SHRIMP

Linguini, creaminess, and shrimp??? Oh, my! How could this not be delicious? I have been on a bit of a mission to lighten up on my intake of meats, like; beef, pork, chicken and lunchmeats. I’m not doing away with them, but purposely serving them less often and implementing more fish and shrimp (well all seafood, I suppose) and pasta. So this recipe for Creamy Linguini and Shrimp fits the bill perfectly.

Now, seriously, you can’t have ingredients like cream, butter and shrimp and not feel like you are having a decadent meal. I don’t feel at all deprived replacing some beef with shrimp. Yum! I have a feeling you won’t either 🙂

Serve this with a simple salad and some crusty bread slathered with my recipe for THE BEST ROASTED GARLIC and you have an easy and delicious meal.

HELPFUL HINTS FOR CREAMY LINGUINI AND SHRIMP

If it is available, I like to use the pasta found in the refrigerated section in the store, instead of the dried boxed or bagged pasta. There is absolutely nothing wrong with dried pasta, I use it all the time, it is simply a matter of preference.

Feel free to top with freshly grated or shaved parmesan cheese.

You could, also, top with a little sprinkle of fresh basil cut into thin ribbons, if desired.

Equipment

Ingredients

  • 16 ounces Linguini cooked
  • 4 Tablespoons Butter
  • 4 Tablespoons EVOO
  • 1 Tablespoon All-purpose flour
  • 1 teaspoon Herbs de Provence dried
  • 1 teaspoon Basil dried
  • 3 large Fresh garlic cloves grated
  • 1/4 cup White wine
  • 1 cup Chicken broth
  • 4 cups Heavy whipping cream
  • 2 Pounds Shrimp peeled and deviened
  • 2 cups Fresh baby spinach
  • 2 Tablespoons Fresh basil finely diced
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
  • 1 Juice from 1 lemon

Instructions

  • Cook the pasta and set aside.
  • In a large pan, on medium-high heat, heat the butter and EVOO.
  • Add the flour, whisking until smooth.
  • Add the Herbs de Provence, and dried basil.
  • Lower the heat to medium. Add the freshly grated garlic. Cook, stirring constantly, for 1 MINUTE ONLY!
  • Add the white wine, chicken broth, and heavy whipping cream.
  • Immediately add the shrimp, baby spinach, fresh basil, Kosher salt, freshly ground black pepper and fresh lemon juice to the mixture
  • Cook just until the shrimp turn pink and the sauce thickens just a bit.
  • Add the pasta to the mixture or serve the mixture over pasta, however you prefer.
  • Enjoy!
