BUTTERY HERBED STEAK BITES

Did someone say steak? And butter? Oh, yeah, what a good combo this is! This recipe for Buttery Herbed Steak Bites is magically delicious and super quick to make. This delicious main course can be ready in about 15 minutes.

Most often when I enjoy a steak, I prefer it grilled. There is nothing like that freshly grilled taste, but, every now and then I just don’t feel like messing with the grill. That’s when these bad boy bites come into play.

HELPFUL HINTS FOR BUTTERY HERBED STEAK BITES

Remove/trim excess fat from whatever steaks you are using.

You can use whatever steak you prefer, or have on hand, but, remember, the type of steak you choose for this dish will absolutely affect the outcome. You can use sirloin, but it may, or may not be a little chewey. Ribeye is great, but there is typically quite a bit of fat to cut off. I prefer to use New York Strips because they typically don’t have a lot of fat that needs to be cut off and are still moist and tender.

For the most tender result, slice strips against the grain and then into whatever size cubes you desire. The key is to try to cut them all about the same size, so that they will cook evenly in the same amount of time.

I know that there are people who like their beef cooked well done, but these steak bites cook very quickly and if you overcook them, they WILL be dry.

Keep moving the steak bites around in the pan to ensure even cooking. If you see a piece that still has an uncooked side, simply use tongs to flip it to that side.

Unless I use my huge pan, I cook these steak bites in two batches, so the pan is not over crowded.

Equipment

  • large pan
  • Cutting board
  • Sharp knife

Ingredients

  • 2-2.5 pounds Steak Fat removed, cut into cubes Approx 2×2
  • 4 Tablespoons Real butter divided, if cooking in two batches
  • 2 Tablespoons EVOO divided, if cooking in two batches
  • 2 teaspoons Dried Herbs de Provence divided, if cooking in two batches
  • 2 teaspoons Dried rosemary divided, if cooking in two batches
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Instructions

  • Remove any excess fat from the steaks.
  • Slice the steak into about 2 inch strips, cutting against the grain. Then cut into cubes.
  • Heat a large pan on medium-high heat. Once it is hot, add half the butter and half of the EVOO (if you are cooking in 2 batches, otherwise use all of it) Continue heating until the butter is melted.
  • Once the butter is melted, add the cubes of steak.
  • Sprinkle the steak with half of the Herbs de Provence and rosemary (if you are cooking in 2 batches, otherwise use all of it) and Kosher salt and pepper.
  • Cook, stirring almost constantly until you reach your desired level of doneness. I cook mine for about 3 minutes.
  • Make sure to spoon some of the delicious buttery herbed sauce over the steak bites.
