BEST EVER ROASTED SWEET POTATOES

In this house, we do sweet potatoes. We like microwave cooked sweet potatoes with butter, we like sweet potato fries. These Best Ever Roasted Sweet Potatoes, we LOVE them!!! The blend of the sweetness of the sweet potatoes combined with the earthiness of the EVOO and seasonings is simply outstanding. Add some char and they are out of this world!

HELPFUL HINTS FOR BEST EVER ROASTED SWEET POTATOES

This recipe is so easy, there aren’t many helpful hints needed. The one thing I highly suggest is to let the potatoes cook long enough to char just a bit. Oh my goodness, it is good!

GROCERY LIST

  • Sweet potatoes
  • Extra virgin olive oil – EVOO
  • Pink sea salt or Kosher salt
  • Freshly ground black pepper
  • Dried thyme

You will need a sheet pan for roasting in the oven.

I line a sheet pan with foil and then place a piece of parchment paper over the foil.

A sharp knife and cutting board will be helpful in cutting the potatoes in half. I just ordered this cutting board.

Equipment

  • Sheet tray/baking tray
  • Parchment paper
  • A sharp knife
  • Cutting board

Ingredients

  • 4 Fresh sweet potatoes Washed and cut in half, lengthwise
  • EVOO drizzle liberally
  • Pink sea salt or Kosher salt to taste
  • Freshly ground black pepper to taste
  • Dried thyme to taste

Instructions

  • Pre-heat oven to 400℉.
  • Prepare a baking tray by lining it with foil to completely cover, then add a piece of parchment paper to lay the sweet potatoes on. Set aside.
  • Wash the sweet potatoes thoroughly and dry.
  • Place the sweet potatoes on a cutting board and cut in half, lengthwise.
  • Place the halved potatoes face up onto a foil lined and parchment papered baking sheet.
  • Drizzle each potato top liberally with EVOO.
  • Sprinkle each potato with Pink sea salt (or Kosher salt), freshly ground black pepper and dried thyme, to taste.
  • Flip each potato over so that the cut side is facing down.
  • Drizzle EVOO over the potato skins.
  • Bake in a pre-heated 400℉ oven for 35 to 45 minutes. Leaing them long enough to get a little char on them.
  • Eat them just as they are.
