BANANA CAKE WITH CREAM CHEESE FROSTING

Bananas are so delicious. To me, they have such a tropical taste. Not only are they delicious all on their own, but they are great in breads, muffins, cakes and even smoothies (I LOVE them in smoothies!). This recipe for Banana Cake with Cream Cheese Frosting is no exception. Bananas add a wonderful flavor and, also, moisture and texture.

Hey, since there is banana in this cake, that makes it a health food, right? Haha! Just teasing. A girl can try.

HELPFUL HINTS FOR BANANA CAKE WITH CREAM CHEESE FROSTING

This cake is great frosted or unfrosted. Try is both ways!

If you prefer your cake a bit sweeter, or to have a bit more frosting, simply double the recipe. I’ve tried it as I had listed and doubled. For me, I like the amount listed best, as doubling the frosting recipe makes it a little too sweet.

Equipment

  • Hand mixer
  • 9×13 Casserole dish

Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon Ground cinnamon
  • 1/2 cup Salted butter softened
  • 1 1/2 cups Granulated sugar
  • 1/2 cup Dark brown sugar
  • 3 Large eggs
  • 2 teaspoons Pure vanilla extract
  • 3/4 cup Sour cream
  • 3 Ripe to overripe bananas mashed
  • 3/4 cup Walnuts optional
  • FROSTING
  • 4 ounces Cream cheese softened
  • 1/4 cup Salted butter softened
  • 1/2 teaspoon Pure vanilla extract
  • 1 1/2 to 2 cups Powdered sugar

Instructions

  • Pre-heat oven to 350℉.
  • Spray a 9×13 casserole pan with a neutral flavored cooking spray.
  • Place peeled bananas in a small bowl and smash with a fork until they are fairly smooth.
  • In a medium size bowl, add flour, baking soda, cinnamon, and Kosher salt. Mix well. Set aside.
  • In a large bowl, add softened butter, granulated sugar, dark brown sugar, eggs, vanilla extract and sour cream. Cream together for 2 minutes with an electric mixer.
  • Add the mashed bananas. Mix on low just until well incorporated.
  • Add chopped walnuts, if desired. Stir.
  • Pour mixture into sprayed 9×13 casserole pan.
  • Add some walnuts on top, if desired.
  • Bake in pre-heated 350℉ oven for 35 to 45 minutes, or until a toothpick inserted in the middle comes out clean.
  • FROSTING
  • Using an electric mixer, cream together the softened butter and softened cream cheese until smooth.
  • Add the vanilla and blend.
  • Add the powdered sugar and mix until well blended.
  • Spread onto cooled Banana cake. Sprinkle with chopped walnuts, if desired.
